NUTRITION IN SERVICES FOR PUBLIC CATERING
The course forecasts 36 hours of teaching.
Public catering (6 hours)
History, definition, classifications. Commercial catering and social catering. Classification of catering activities: criteria definition. Techniques of production and distribution of meals for catering: cook & serve, cook & warm, cook & chill, cook in bag, cook & deep frozen and cook & frozen. Traditional and centralized kitchens.
Synoptic food tables (4 hours)
Use for a community dietetic.
Recommended dietary allowances (RDA, LARN) (4 hours)
Use for a community dietetic and menu.
Drawing up and formulation of a dietetic for community in physiological and pathological state (22 hours).
Nutritional anthropometry, nutritional habits, tastes, intolerances and allergies, age and sex classification, energy and nutrients recommended; recommended foods for breakfast, snacks, lunch and dinner; monthly menu; formulation of autumn, winter, spring and summer menu; indication for dinner, if necessary.

SEMINARS I
The course forecasts 24 hours of teaching.
•Aspects relating to technical-organizational of nutrition in services for public catering (4 hours)
Catering system. Characteristics of catering. Meal distribution. Management of surplus and waste.
•Formulation of a dietetic with computer (16 hours)
Calculate the energy needs and nutrient by sex and by age using an Excel worksheet. Processing data to provide coverage of energy and nutrients for groups of people or communities.
•Tender (4 hours)
Peculiarity; importance; use; nutritional, organoleptic and hygienic characteristics of foods.
SEMINARS II
The course forecasts 12 hours of teaching.
Safety requirements of food, traceability, duties of agro-food operators. European Food Safety Authority: its structure, its functions and the basic principles. Hygiene and self control of the food operators: HACCP and other rules on hygiene in the latest EU discipline.

Learning assessment procedures

NUTRITION IN SERVICES FOR PUBLIC CATERING AND SEMINARS
The exam consists of verifying the level of achievement of learning outcomes above.
The exam is divided in 2 parts that take place on different days:
-a practical test with setting and preparation of a dietetic with written report, that takes account of all the topics covered in the course. The test is intended to evaluate the understanding of the topics of the base and has the character of selection (the student who does not show sufficient knowledge of the topics not admitted to the oral test). To pass the test you must acquire at least 8 points out of 15. The expected time for the test is 150 minutes. It is not allowed to consult texts or use smartphones, .;
-an oral test, about 1 hour, with discussion of the practical and the topics discussed in the course. During the test is not valued so much the ability to repeat the topics covered in class, as the ability to link and compare different aspects discussed during the course. To overcome the test you must acquire at least 10 points out of 18.
The final grade is the sum of the two scores.
To pass the exam you must obtain a minimum score of 18 on 33.
If one of the two trials is lacking or if the total score is less than 18, you must repeat all and 2 trials.
SAFETY IN THE WORKPLACE
Multiple choice quizzes: 16 questions with 4 possible responses (only one exact). Score: right response: 2 points; wrong response: -1; no response: 0 point. Exam lenght: 20 minutes.
THE FINAL GRADE IS A WEIGHTED AVERAGE OF THE MARKS OBTAINED IN EACH TESTS.
