FOOD IN WORKER AND SPORTSMAN
This course is part of the course ALIMENTAZIONE E NUTRIZIONE UMANA II. The aim is to provide knowledge on the basics of endocrine and metabolic bases to manage the diet of a worker and an athlete
The main acquired knowledge will be:
•muscle energy needs
•energy sources during physical activity
•principles of caloric calculation for energy expenditure during physical activity
•diet and physical activity in diabetic subjects;
•diet in the diabetic athlete
The basic acquired abilities will be:
•to manage the diet of a worker depending of the intensity of physical activity
•to manage the diet of an athlete depending of the sport and training intensity
•to manage the diet of diabetic patients during physical activities, taking into account therapeutic regimens

ASSESSMENT OF THE NUTRITIONAL STATUS AND NUTRITION SURVEILLANCE SYSTEM
Acquire specific and detailed knowledge about undernutrition and overnutrition of single individual and human group to assess the nutritional status. Use the knowledge gained during the assessment of nutritional status to design and implement a nutritional surveillance system.

The course forecasts 24 hours of teaching.
•Nutrition (4 hours)
General aspects, physiology, definition, steps. Human nutrition, Nutrition of human groups.
•Nutritional status (6 hours)
Assessment of the nutritional status: procedural sequence of nutritionist’s action, data for the assessment of nutritional status.
•Food consumption survey (3 hours)
Food balance sheets and food surveys (recall surveys, record surveys).
•Somatic sizes (2 hours)
Nutritional anthropometry.
•Biochemical signs of malnutrition (2 hours)
•Biochemical tests (4 hours)
Clinical signs. Public health and statistical markers. Malnutrition (undernutrition and overnutrition).
•Nutrition Surveillance System (3 hours)

ASSESSMENT OF THE NUTRITIONAL STATUS AND NUTRITION SURVEILLANCE SYSTEM
The lectures will be delivered with distance learning (video lessons and / or streaming) with integration in the presence, where the epidemiological conditions linked to the transmission of the SARS-CoV-2 virus infection allow it.
Focus groups will also be carried out in presence and also in streaming mode for the benefit of students who are unable to participate in teaching or curricular activities in presence and furthermore these activities will be modulated according to the epidemiological conditions linked to the transmission of the SARS-CoV-2 virus infection.

Learning assessment procedures

FOOD IN WORKER AND SPORTSMAN
Oral test lasting about 20 minutes with 3 questions, that will evaluate the acquired knowledge. In addition, the test will evaluate the capacity of connecting the acquired notions.
FOOD IN GERIATRIC AGE
The exam is an oral section, lasting about 20 minutes, designed to evaluate the degree of knowledge and understanding of the topics. In particular the possible role of the diet in the elderly subject with or without the typical age associated disorders. The objective of the examination is to verify the ability to compare and to connect differed topics developed during the course (ageing process-nutrition-age related diseases)..
LEGAL MEDICINE
Partial test. The aims of the test is evaluate the study of the subject and the understanding of the basic topics. the final evaluation of profit will be carried out through a written test with 30 multiple choice questions (with 4-5 answers each). Each correct answer is worth 1 point; a wrong answer or no answer is worth 0 points. The test time is 30 minutes. It is not allowed to consult texts, notes, smart phones, tablets, etc. In case of refusal of the exam, the exam can be resubmitted to the subsequent appeal in oral form.
PROFESSIONAL ETHICS
The exam is an oral section, lasting about 20 minutes (4-5 questions), to assess the degree of subject knowledge and understanding of the topics covered. The test has the objective the performance comparison and connection between the different arguments developed during the course.
ASSESSMENT OF THE NUTRITIONAL STATUS AND NUTRITION SURVEILLANCE SYSTEM
The learning tests will be carried out in written form in the presence, where the epidemiological conditions related to the transmission of the SARS-CoV-2 virus infection allow it.
THE FINAL GRADE IS A WEIGHTED AVERAGE OF THE MARKS OBTAINED IN EACH TESTS.
