Training objectives

Modulo: 63958 - BIOCHIMICA DELLA NUTRIZIONE
------------------------------------------------------------
The integrated course focuses on the topics of biochemistry of nutrition in good health and in particular physiological and pathological conditions. The objective to be achieved is to give the student the means to understand nutritional causes that lead to the onset of noncommunicable diseases and dispense nutritional advice and propose diet products and nutritional supplements according to the characteristics of the subject.

The main skills acquired will be:
• Knowledge of the mechanisms of regulation of metabolic processes and in particular of hormonal regulation.
• Knowledge of lipid metabolism and vitamins
• Understanding of strategies aimed at the prevention of wellness pathologies (diabetes, hypertension, obesity)
• Knowledge of the link between metabolism and the immune system in wellness, oncological and infectious diseases
• Knowledge of diet products and understanding of their use
• Knowledge of vitamins and understanding of their physiological role
• Ability to perform a critical analysis of a dietary product or supplement

The integrated course focuses on the topics of nutrition and proper nutrition in individuals in good health and in particular physiological and pathological conditions, which require special nutrition. The objective to be achieved is to give the student the means to dispense nutritional advice and propose diet products and nutritional supplements according to the characteristics of the subject.
The main skills acquired will be:
• Knowledge of nutritional needs in standard physiological conditions and in particular periods of life (childhood, adolescence, old age) and during specific periods (nursing pregnancy, intense sport).
• Knowledge of diet products and understanding of their use
• Knowledge of vitamins and understanding of their physiological role
• Knowledge of food supplements and understanding of their use
• Ability to perform a critical analysis of a dietary product or supplement

Course programme

Modulo: 63958 - BIOCHIMICA DELLA NUTRIZIONE

The course includes 48 hours of frontal teaching in which the following topics will be developed:
FOOD IN HUMAN NUTRITION AND THEIR ENERGY FUNCTION: body weight homeostasis, energy requirements, ATP synthesis, anabolism and catabolism, foods as a source of antioxidants.
HORMONAL REGULATION OF THE METABOLISM.
LIPIDS: classification, metabolism, destiny and biological functions.
VITAMINS AND MINERAL SALTS: characteristics of water-soluble and fat-soluble vitamins, macro elements and microelements.
IMMUNONUTRITION: metabolic bases of the immune response. Regulation of the immune response by organic molecules and salts.
METABOLIC SYNDROME: immunological basis, role of inflammation and contribution of different classes of lipids.
UNDERTUNERATION: impact on susceptibility to infectious and non-infectious diseases.
Nutrition in hospital setting and in ageing.

The course includes 48 hours of lectures that will be developed on the following topics:
FRAMEWORK: legislation related to food, health foods, supplements, novelefood, functional foods, nutraceuticals. Legislation claim.
CARBOHYDRATES, LIPID AND PROTEIN SUPPLEMENTS: Legislation and composition .
VITAMINS AND MINERALS SUPPLEMENTS: : Legislation and composition
DRINKING WATER AND MINERAL WATER: chemical, physical and microbiological properties of drinking water, classification and properties of mineral waters.
EATING DISORDERS: the diet in anorexia, bulimia, obesity, substitutes for meals, satiating products, essential amino acids.
INFANTS FORMULA, BABY FOODS: breast milk composition, infant formula, milks, premature or underweight infant formula, baby foods, legislation, dietary guidelines for the adolescent.
DIET AND SUPPLEMENTATION IN WOMAN: dietary guidelines and supplements during woman life stage puberty, reproductive age and climacteric period.
DIET AND SUPPLEMENTATION IN SENIORS ': dietary guidelines and supplements in the elderly.
HIGH PROTEIN DIETS AND VEGETARIAN DIETS: advantages and disadvantages.
SPORT SUPPLEMENTS: the water balance, metabolism, nutritional needs; carbohydrates, lipids, proteins / amino acids supplements: composition and legislation.
FOOD ALLERGY: cause, major allergenic foods, infant formula for babies with allergies to cow’s milk.
GLUTEN FREE PRODUCTS: cereals with and whitout, composition of gluten-free products, food choice for celiac patient.
PRODUCTS FOR PATIENTS WITH DISEASES OF THE METABOLISM OF AMINO ACIDS, SUGAR AND LIPIDS: Products for metabolism disorders of phenylalanine, tyrosine and histidine. The diet in diabetes mellitus, sweeteners. Dietary treatment of galactosemia, fructose intolerance, lactose intolerance; The diet in dyslipideamia: hypercholesterolemia, hypertriglicidemia.
ENTERAL AND PARENTERAL NUTRITION: product’s composition for enteral and parenteral nutrition in patients with different physiological status.
PROBIOTICS AND PREBIOTICS: characteristics of probiotic microorganisms, characteristics of the prebiotic, FOS, GOS, symbiotic.

The teaching method is based on front lectures, as an indispensable tool for synthesis and development of the formative objectives: relies on slides projected, of schemes that facilitate the study of the subject shown on the board to guide the training and ' adoption of texts dedicated to the deepening of the themes. The lectures are set to an interactive dialogue student-teacher.

The teaching method is based on front lectures, as an indispensable tool for synthesis and development of the formative objectives: relies on slides projected with immagines and schemes that facilitate the study of the subject. The lectures are set to an interactive dialogue student-teacher.

Learning assessment procedures

The aim of the exam is to verify at which level the learning objectives previously described have been acquired. The exam consists in an oral comunication to verify the knowledge’s level of the course contents and the learning of specific vocabulary. The aim of exam will not be to verify the ability of “repeating” specific topics tackled in the course as the ability to link and compare different aspects covered during the course.
The exam will be set up as follows: a course topic will be asked and specific questions will be asked on related topics.
The integrated examination can be performed through partial tests.
